27 Oct Luscious Limes
This week’s Food Blog is something sweet, tart and tangy – and ridiculously easy n quick. Which is the way I like my recipes because when I want to eat something delicious, I don’t want to spend hours in the kitchen making it.
There’s always lots of limes available at the market here in Samoa and very cheap.
If it were up to the Fab5, we would make vai tipolo (fresh lemonade) with them every day but another favourite is creamy rich lemon curd. Especially good with hot scones and butter. (But that’s another food blog post…)
I gave the daughters a quick lesson on Sunday and everyone was very pleased with the results. They liked it so much that they ate it all with pancakes before I could take a decent picture of the finished product. (Hence the borrowed pic from Pinterest, alongside one of Bella at work doing the very important stirring!)
Lemon Curd (or Lime Curd…)
3/4 cup sugar
Juice of 3 limes (or lemons. Whichever you’ve got.)
4 tbsp. butter
Whisk together eggs, sugar, juice of lemons. Stir on medium heat stove until thick. Remove from heat and add butter. Whisk. Then let it cool and thicken. (We like to add a bit more sugar cos we like it more sweet than tart.)
